Cabbage Salad

- 1 medium cabbage
- Juice of 1 medium lemon
- Canola oil
- Vinegar
- Salt
- Sugar
- Chop the cabbage in a coarse food processor vegetable chopper and place in a large bowl
- Squeeze the lemon
- Add the lemon juice along with an identical amount of vinegar and oil to a small jar
- Add one teaspoon of sugar and one teaspoon of salt
- Shake well
- Spread the dressing over the cabbage, stir well
- Place a plate in the bowl and a heavy item (such as a jar filled with water) over it, in order to press the cabbage
- After a couple of hours, stir well again and serve
