Cabbage Salad

  • 1 medium cabbage
  • Juice of 1 medium lemon
  • Canola oil
  • Vinegar
  • Salt
  • Sugar
  • Chop the cabbage in a coarse food processor vegetable chopper and place in a large bowl
  • Squeeze the lemon
  • Add the lemon juice along with an identical amount of vinegar and oil to a small jar
  • Add one teaspoon of sugar and one teaspoon of salt
  • Shake well
  • Spread the dressing over the cabbage, stir well
  • Place a plate in the bowl and a heavy item (such as a jar filled with water) over it, in order to press the cabbage
  • After a couple of hours, stir well again and serve
